Total destemming, fermentation with temperature control in stainless steel vats with daily pumping over and long post-fermentation maceration. StageIt ages in new 500 L French oak barrels for 18 months. Wine not filtered or stabilized by cold so that all its elements are respected. ConsumptionIntense dishes, red meat, game and strong cheeses. It should be served at a temperature between 14º and 16º C. Wine with aging potential, however it can be consumed immediately, decanting is recommended. conservationThe wine must be stored in a cool and dry place, sheltered from light and temperature fluctuations and the bottle must remain in a horizontal position. "...This is a step up over the Valle Longo Reserva. It´s not quite as smooth, but it´s richer in mouthfeel, more expressive and better structure d. While that is at peak and more likely to go down than up in the future , this might still improve a little. The rest is similar. That is, it is rather elegant and a little understated, beautifully balanced and fresh. This does nicely. It should hold throughout most of the decade."
