ViticultureVery old vineyards of Cima Corgo planted on old platforms with north and south sun exposure and at different altitudes and new vineyards of Baixo Corgo planted on new platforms with north/east sun exposure.
WinemakingAfter careful selection of the grapes and destemming, a pre-fermentation skin maceration was carried out, followed by the light pressing of the grapes. After that the must underwent decanting, followed by the fermentation of the must in new French oak barrels.
StageAt the end of alcoholic fermentation the wine aged for a period of 9 months in the same barrels, during which batonnage was performed.
ConsumptionExcellent served with oven roasted fish dishes and white meats with butter and/or cream based sauces. Best served with seafood as well as oriental cuisine. It should be served at a temperature between 10°C and 12°C. To be consumed immediately or within the next 5 years.
conservationThe wine should be stored in a cool, dry place, protected from light and temperature fluctuations, and the bottle should remain horizontal. Since wine is a natural product it will create a deposit with age.
